I love and find the appreciation in things like cheese, bread, and red meat. However, these are things that I don't always eat on a daily basis due to personal dietary issues. As a culinary professional I think its important to learn about and understand different dietary needs and alternatives. This includes vegetarians, vegans, those who suffer from food allergies, and even the raw food purists.
I was inspired by the recent issue of Whole Living magazine which featured raw recipes. I decided to try them out and loved every single one. To those who don't understand the raw food diet, it may seem like you're limiting yourself, but really it's an opportunity to get creative. The following pictures are deliciously deceitful and guess what?
There is no dairy or sugar of any kind. Here is a quick and easy recipe for my Chocolate Pudding and Almond Butter Parfait....
Chocolate Pudding and Almond Butter Parfait
6 Tbsp cocoa powder
1/4 cup raw honey
1 tsp pure vanilla extract
2 bananas, peeled and frozen
3 Tbsp almond butter
Garnish: Toasted chopped almonds, strawberries, cocoa nibs, sea salt
Puree avocados, cocoa powder, honey, vanilla, and bananas in a food processor until smooth. Taste and if you prefer a little more sweetness, just increase the amount of honey by a teaspoon or two.
Begin to layer chocolate pudding, sliced strawberries, and almond butter. Continue to alternate layers until the serving dish of your choice is filled to the top.
Garnish with the chopped almonds, cocoa nibs, more strawberries, and a sprinkle of sea salt
